Frank can be a stubborn eater, and sometimes I have to be sneaky and creative to get him to eat certain foods.
A favorite breakfast I’ve been cooking lately is egg and banana pancakes. He LOVES these pancakes, and always ends up asking for more.
This recipe is easy:
1. Take 2 medium eggs and 1 large super ripe banana:
2. Mash the ripe banana well. (Sometimes I use my magic bullet but a fork works fine)
3. Pour them together and get your little helper to do the mixin!
4. Place a little butter or spray on your pan and cook for 1 minute on each side:
4. Add some berries or real maple syrup and enjoy!
Yum! I'll have to try this. I, too, have a stubborn eater for a toddler.
